Cucumber Dip
1. Pasta Salad
1/2 bag of Cucumber Dip
2 tbsp Olive Oil
1 tbsp White Wine Vinegar
1 bag of Pasta of your choice
1 can black olives
1 can corn
1/2 cup grated cheddar cheese
1 cup grated carrots
Optional: other veggies, grated or diced
Mix first 3 ingredients - set aside. Cook
pasta according to package - cool. Mix all
ingredients together and cool in refrigerator
for a couple of hours.

2. Creamy Cucumber Salad
Slice 1 English cucumber into thin slices
in a mixing bowl, set aside. Mix 1/4 cup
of sour cream with a few tablespoons of milk
until you get a thinner consistency of the
sour cream, but not extremely milky. The
exact measurements are influenced by if you
are using a regular sour cream, light or
FF and whole milk vs skim. Use your judgment.
Add 1/2 package of Cucumber Dip mix to the
sour cream mixture and pour over cucumbers
and toss. Let chill in fridge and serve cold.
Make a great summer side dish.

3. Cucumber Pita Wedges
1 (8oz) softened cream cheese
½ package of Cucumber Dip
4 whole pita breads
1-2 med. cucumbers (peeled and cut into thin
slices)
lemon pepper seasoning
In a mixing bowl, beat cream cheese and cucumber
dip together. Split pita breads in half,
forming 2 circles. Spread mixture over pita
circles, and cut each into 6 wedges. Top
with cucumbers and sprinkle with lemon pepper.
