Cream of "Anything" Soup
New England Clam Chowder by Roberta Whalen

Saute 1/4 stick of butter with 1/2 small
onion chopped, about 4 stalks of celery thinly
chopped, 4 potatoes cooked al' dente and
chopped into small cubes (or one bag of already
cooked and chopped potatoes now sold in the
produce section, I found these at Wal-mart).
In a soup pot, prepare a package of Cream
of Anything Soup Mix as directed, and when
creamy, add 2 small cans of chopped clams,
the sauted vegetable mixture and 1/4 cup
of cream or half and half to lighten the
color a bit. Serve with soup crackers! Hit's
the spot on a chilly day.
