Chilly Weather Chili
Beach Comber Special

You know how you always have left over chilly?
Well, this is something that we have been
doing for years here! It is called Beach
Comber Special. This is a dish that Mama
Joy, my grandmother, and her sister, June,
created. They called it beach comber special
because they used to walk along the beach
and gather all different types of shells.
The dinner reminded them of all of their
shells in a big pile. It is one of our favorite
meals of all time.
24 Ritz Crackers
2 cups cooked rice
Chilly Weather Chili
1 bell pepper, diced
½ head chopped lettuce
1 cup celery
1 diced cucumber
1-2 diced tomato
2 Tbsp. Cornstarch
¼ of a 3 lb. Velveeta cheese
Make cheese sauce first by cutting Velveeta
into small chunks and adding a little water
to the pan. Melt the cheese and water. In
another bowl combine cornstarch and a little
water. Stir it well until it is thick. Pour
this into the cheese. Stir it constantly
or it will lump. Salt it. Now, crumble crackers
in each dinner plate. Serve rice on top of
crackers. Add chili. Top each pile with desired
vegetables. Top with lots of cheese!
